The 2007 Founder’s Signature Collection Charlotte’s Chardonnay is a stunning example of an unoaked Chardonnay.  Its intriguing nose presents a gentle but subtle nuance of tropical fruit with underlying citrus tones.  On the palate, it presents the same flavour profile perfectly balanced with a crisp but gentle acidity.  This wine can be enjoyed now but could be put down for 2 years.   This wine would pair well with seafood salads, pastas with very light cream or oil based sauces, chicken dishes, goat’s cheese, brie and mild Oka.
