2016 provided close to perfect conditions for wine grapes with a warm, arid growing season and temperate fall harvest. Virtually all grape varieties performed well in this growing season and the dry and pleasant harvest season meant most grapes were picked in pristine condition. This quality should be evident in both red and white varieties grown in the Niagara region.
A classic Cabernet Sauvignon profile, with a rich nose of cassis, black currant, blackberry and perfumed notes of eucalyptus mingles with smoky spices. The palate is full bodied with a lush juicy black fruit core, framed by ripe tannin and delicate acidity. Texture overall is rich, creamy and elegantly structured. Giving this wine time to age will reap big rewards. Drink 2020 – 2026.
100% Cabernet Sauvignon grapes harvested from the Vinemount Ridge sub appellation in Niagara at an average of 22° brix. Grapes came into the winery and were immediately crushed and put into one tonne bins to ferment. The juice was fermented on the skins and then left in the bins for a period of 28 days for maximum colour and tannin extraction. The wine was then pressed off into a mixture of 90% French and 10% American oak barrels, where full malolactic fermentation was allowed to occur. The wine was then aged in barrel for a period of 26 months. The final blend was assembled and bottled August 2019.
