The Vintage: 2016 provided close to perfect conditions for wine grapes with a warm, arid growing season and temperate fall harvest. Virtually all grape varieties performed well in this growing season and the dry and pleasant harvest season meant most grapes were picked in pristine condition. This quality should be evident in both red and white varieties grown in the Niagara region.
Tasting Notes: Juicy, fresh cranberries on the nose accompanied by wild strawberry, and savoury notes of tarragon, spice and liquorice. The palate is juicy with lively acidity and balancing subtle sweetness, flavours include raspberry, cranberry, and white currant.
Technical Notes: 100% of Pinot Noir harvested by hand from the Pinot Noir block at Stoney Ridge Winery. Grapes were picked late September and immediately pressed.
Fermentation started on the skins in stainless steel tank, and during fermentation, a portion the juice was ‘bled off’ into a separate tank, removing the grape skins from the process in what the French call the Saignée method, producing an elegant pink tone to the wine.
