4 Year old, Extra Sharp Cheddar (Organic)

This lactose-free, rind less firm cheese is made with organic, thermized milk. Extra-sharp cheddar (aged 1 year and over) has a melting texture. Its buttery, nutty taste is a bit stronger than that of the Biobio Cheddar. The more aged it is, the more tiny salt crystals are perceptible.

Extra-sharp cheddar is also ideal in the second or third service of a wine and cheese tasting, accompanied by various fruits, nuts and bread.

Biobio cheeses are high-quality organic cheeses that contain no chemical dyes, artificial flavours or synthetic additives. They are also made using microbial enzymes derived from a vegetable source, not with rennet. The certified-organic milk used to make the cheeses comes from cow herds raised on Quebec family farms. The pastures, forage and grain used to feed them contain no synthetic products such as pesticides or fertilizers and no GMOs.

holiday themed wine and cheese

14 Arpents

Located along the shore of Lac-St-Jean, the farm has been in the family for 5 generations. The milk for this farmhouse cheese comes from the family’s herd of Brown Swiss cows. This square shaped, soft cheese is handwashed to create the orange colored rind with its hint of hazelnut that becomes more pronounced with age. The name comes from the road that borders the dairy, Le Chemin 14 Arpents (14 Acres).

Abbot’s Gold, also known by other names such as ‘Caramelised Onion Cheddar’ or ‘English Cheddar with Caramelized Onions’, is a traditional English cheese made by the historic Wensleydale Creamery in England. Creamy, classic Cheddar infused with rich, sweet caramelised onions tastes of tangy onion soup with an amazing burst of flavour.

Applewood Smoked Cheddar

Avonlea Clothbound Cheddar

Avonlea Clothbound Cheddar is an unpasteurized cow’s milk cheese that has its roots in the Scottish Orkney Islands. Today, it is produced on small local farms in the lush countryside of Prince Edward Island (P.E.I), off the coast of Canada.

The cheese was brought to Canada by cheesemaker Armand Bernard who learned the recipe for Avonlea while working in United Kingdom. Milk of several small local Holstein herds is used to make the cheese, which is then wrapped in cloth for an aging period of at least a year, before being sold.

Avonlea demonstrates a firm and slightly dry and crumbly pate. The colour varies according to the season and diet of cows with cheeses made during in winter being faint than in summer. The cheese has rich, hearty, savoury flavours of earth and mushrooms, underlined by a fruity tang. [/fusion_text]

Avonlea Clothbound Cheddar

Blue d’Elizabeth

Bleu D’Elizabeth is an organic semi-soft cheese made from non-pasteurized milk with interior mould.

Its natural rind is strewn with ochre-coloured spots and contains beautiful blue and sometimes greenish-coloured veins resulting from the presence of Penicillium Roqueforti. The unique taste and perfect salt balance of this cheese is sure to please the most discriminating palate.

Bleu D'Elizabeth

Blue Haze

Made at the only cheese factory managed by Benedictine monks in North America, Blue Haze is a smoked blue cheese, made by the the monks at the Abbaye de Saint-Benoît-du-Lac in Quebec. Blue Haze is hand made in Quebec then shipped to Cayuga, Ontario for smoking over a mixed blend of Ontario hardwood.

A sweet mild blue with a delicate smokey flavour. Excellent as a topping on burgers and steak. A good introductory blue as the subtle smoke flavour mellows the acidity of the blue veining.

Chateau du Bourgogne

Chateau de Bourgogne has a cake-like shape and a lovely white bloomy rind. Its interior is ivory in colour and very smooth. The aroma of Chateau de Bourgogne is creamy and somewhat buttery, with a hint of nuttiness. The paste is creamy and rich, melting in your mouth like soft butter. The slightly bitter rind acts as an excellent balance to the creamy and decadent interior.

Irish Dubliner

Dubliner is an original, award-winning Irish cheese that is named after the city of Dublin, though produced in County Cork. Developed by Irishman Jhon Lucey, the cheese is made from pasteurized cow’s milk and is available in a number of varieties and flavours.

An original Dubliner is a sweet, mild and mature cheese taking over 12 months to develop the sharp robust flavour and texture of mature cheddar, the nuttiness of Swiss cheese and the bite of Parmesan cheese. It has a high content of calcium, due to the calcium lactate crystals in the cheese. Some companies produce gluten free, diabetic and vegetarian friendly version of this cheese. A reduced fat Dubliner is also available in the market.

Irish Porter Cheddar (Guinness Cheddar)

Marion Cahill made Irish Plain Porter Cheese from pasteurized cow’s milk and Guinness-brewer Porter since 1759. It is blended to create a visually dramatic mosaic pattern which is the most attractive part of the cheese other than its flavour. Irish Porter is a vegetarian cheese as the curds and whey are separated with vegetable rennet.

The flavours of this brown waxed gourmet cheese are full, rich, tangy and chocolatey with a pungent finish.

Le Douanier

A semi-soft cheese with a washed and brushed rind. This variety is left to ripen for more than 9 weeks. The cheese features a signature central line of edible vegetable ash reminiscent of the border crossing and customs office at Lacolle, where this cheese is made. With its earthy aroma and organic flavour, Le Douanier tempts the palate with a hint of nuts and green apple.

Le Douanier

Lindsay Bandaged Goat Cheddar

The lineage of this cheese is a little complex. It’s produced by Mariposa Dairy Ltd. in Lindsay, Ontario (hence the cheese’s name) using milk produced by Lenberg Farms, the country’s largest goat herd operation. Lenberg and Mariposa are both owned by Bruce & Sharon Vandenburg who started their dairy operation in 1986. The cheese is marketed by Finica Foods under the Celebrity International brand. The term “bandaged” refers to a traditional aging technique in which the cheese is wrapped in cheesecloth and coated in oil. This permeable “bandage” protects the cheese from excess moisture loss while giving the cheese access to the air it needs to mature properly. The cheese is aged for at least 12 months.

Mild-to-medium intensity; a sweet, fruity slightly acidic start gives way to light earthy notes, cooked milk, caramel, and a trace of tang that lingers on the tongue. A delicious, complex cheese.

Lindsay Bandaged Goat Cheddar

Manchego

The Manchego is produced in the La Mancha region of Spain, which is also home to Don Quixote. It is made from unpasteurized sheep’s milk. It is one of the popular cheeses from Spain, made from sheep’s milk. It also comes under the PDO guidelines.

The traditional use of grass moulds leaves a distinctive, characteristic zigzag pattern on the Manchego cheese. Authentic Manchego is only made from the Manchego sheep’s milk. Manchego cheese is made from both pasteurized and unpasteurized milk. The farmhouse version is produced from unpasteurized milk while the industrial version is made from pasteurized milk.

The rind is inedible with a distinctive, traditional herringbone basket weave pattern, pressed on it. A typical ear wheat pattern is pressed onto the top and bottom wheels of the cheese. There are specific differences in Manchego cheeses, depending on their aging period.

Smoked Boerenkaas (Gouda)

Boerenkaas, in Dutch translating to “farmer’s cheese”, is a semi-hard cheese with salty and buttery tones, with a slight sweetness towards the end. It was just recently announced a winner in its category of “Flavoured Cheese with Added Non-Particulate Flavouring” at the 2011 Canadian Cheese Grand Prix: considered the most prestigious cheese competition in Canada. It is cold-smoked using a blend of local hardwoods in their own smokehouse. The smoked Boerenkaas retains the sweet and buttery tones of the original, with a wonderful smoky finish that lingers. The uses to this cheese are countless and are just as great on its own.

Sticky Toffee pudding is now a British favourite, first introduced to the island as an upper class dessert in hotels and restaurants. Every cook in the land was set the task of being able to recreate this wonder food and now it is enjoyed by all.

Edward the Explorer is the genius behind this curious combination, whilst hiking in Timbuktu he snacked on a piece of hard toffee, promptly followed by his cheese sandwiches and a light-bulb moment occurred! Following this serendipitous discovery, Peter mixed mild cheddar, toffee pieces, raisins, dates and toffee syrup to make this extraordinary cheese. A table top talking point for all occasions.

This is a hand-made traditional Wensleydale cheese, made from milk drawn from cows grazing the sweet limestone pastures in Upper Wensleydale. This gives the cheese the unique flavor for which it is renowned. It is a fresh, young cheese taken at only three weeks old– it has a clean, mild, slightly sweet flavor with a honeyed aftertaste. The superb texture of fresh Wensleydale is perfectly complemented by the addition of natural ingredients of the finest quality.

Wensleydale with Blueberries

Louis D’or

Ready for the spotlight, the name of the Louis d’Or is elegantly moulded into the orange-tan rind. Its paste is a soft butter yellow with small “eyes” (holes) scattered throughout.

The paste is supple but has a slight crumble, with small crystals infiltrating its smooth texture. Louis D’or’s aroma communicates its full flavours – fruity and nutty with a fresh, tangy flavour. It closes with the long linger of sweet milk – which is where this cheese clinches its seduction.
